Lemon Garlic Butter Shrimp with Asparagus

Ingredients
- 500g (1 lb) large shrimp, peeled & deveined
- 2 tbsp butter
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 bunch asparagus, trimmed & cut into 2-inch pieces
- Juice & zest of 1 lemon
- 1/2 tsp red pepper flakes (optional)
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prep shrimp:
- Pat shrimp dry with paper towels and season lightly with salt and pepper.
- Cook asparagus:
- Heat olive oil in a large skillet over medium heat.
- Add asparagus and cook for 3–4 minutes, until just tender. Remove and set aside.
- Cook shrimp:
- In the same skillet, melt butter.
- Add garlic and sauté for 30 seconds until fragrant.
- Add shrimp and cook 1–2 minutes per side until pink and opaque.
- Add flavor:
- Stir in lemon juice, lemon zest, and red pepper flakes.
- Return asparagus to the skillet and toss to coat in the sauce.
- Serve:
- Garnish with fresh parsley and serve hot — great with cauliflower rice or zucchini noodles.
✅ Pro Tip: Don’t overcook the shrimp — they cook fast, and overcooking will make them rubbery.
