Lemon & Garlic Chicken Bites

Ingredients:

  • 1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • Zest and juice of 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley (optional)
  • Salt and pepper to taste
  • Fresh lemon wedges for serving

Instructions:

  1. Prep the Chicken: Cut the chicken breasts into bite-sized pieces and set aside.
  2. Make the Marinade: In a bowl, combine olive oil, minced garlic, lemon zest, lemon juice, dried oregano, dried parsley (if using), salt, and pepper. Stir well to combine.
  3. Marinate the Chicken: Add the chicken pieces to the marinade, mixing them so they are fully coated. Let it sit for at least 15-20 minutes (or up to an hour for more flavor).
  4. Cook the Chicken: Heat a large skillet over medium heat. Add the chicken pieces (in batches if necessary) and cook for 6-8 minutes, turning occasionally, until the chicken is golden brown and cooked through.
  5. Serve: Serve the chicken bites with fresh lemon wedges on the side for extra citrus flavor.

Tips:

  • For added flavor: You can marinate the chicken overnight for an even deeper flavor.
