Leftover Mashed Potato Cheese Puffs

Ingredients:
– 2 cups leftover mashed potatoes
– 1 cup shredded cheddar cheese
– 1/4 cup grated Parmesan cheese
– 1/4 cup all-purpose flour
– 1/2 tsp garlic powder
– 1/4 tsp onion powder
– 1/4 tsp paprika (optional)
– 2 large eggs
– 2 tbsp chopped fresh parsley (optional)
– Salt and pepper to taste
– 2 tbsp olive oil (for frying)
Instructions:
1. Prepare the Mixture:
– In a large mixing bowl, combine the leftover mashed potatoes, cheddar cheese, Parmesan cheese, flour, garlic powder, onion powder, paprika (if using), and eggs. Stir everything together until fully combined.
