Lasagna Rollups

Ingredients:
For the Lasagna Rollups:
12 lasagna noodles (look for vegan-friendly options)
2 cups marinara sauce (store-bought or homemade)
For the Spinach Tofu Ricotta:
1 block (14-16 ounces) extra-firm tofu, drained and crumbled
2 cups fresh spinach, chopped
1/4 cup nutritional yeast
2 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and black pepper to taste
For Assembly:
Vegan mozzarella cheese (optional)
Fresh basil leaves for garnish (optional)
Instructions:
Prepare the Lasagna Noodles:Cook the lasagna noodles according to the package instructions until they are al dente. Drain the noodles and lay them flat on a clean surface or parchment paper to prevent sticking.
Prepare the Spinach Tofu Ricotta:In a large mixing bowl, combine the crumbled tofu, chopped fresh spinach, nutritional yeast, minced garlic, lemon juice, dried basil, dried oregano, salt, and black pepper. Mix everything together until well combined. Taste and adjust the seasoning if needed.
Assemble the Lasagna Rollups: Preheat your oven to 350°F (175°C). Spread a thin layer of marinara sauce evenly on the bottom of a baking dish to prevent the rollups from sticking. Take one cooked lasagna noodle and place it flat on a clean surface or on a cutting board. Spoon a generous amount of the spinach tofu ricotta mixture onto the noodle, spreading it evenly from end to end. Carefully roll up the lasagna noodle, starting from one end, to encase the filling. Place the rolled lasagna noodle seam side down in the prepared baking dish. Repeat the process with the remaining noodles.
Bake the Lasagna Rollups: Once all the rollups are assembled in the baking dish, pour the remaining marinara sauce over them, spreading it evenly. If you’d like, sprinkle vegan mozzarella cheese on top of the rollups for added flavor and meltability. Cover the baking dish with aluminum foil and bake in the preheated oven for about 25-30 minutes, or until the rollups are heated through and the sauce is bubbling.
Serve:Remove the lasagna rollups from the oven and let them cool slightly before serving. Garnish with fresh basil leaves if desired.
