KFC-style Coleslaw at home

Ingredients:

  • 4 cups finely shredded cabbage (about 1/2 medium head of cabbage)
  • 1/4 cup grated carrot (optional, but adds color)
  • 1/4 cup finely chopped onion (optional)
  • 1/2 cup mayonnaise
  • 2 tbsp sugar
  • 1 tbsp lemon juice (or white vinegar)
  • 1 tbsp apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp mustard powder (optional for an extra kick)

Instructions:

  1. Prepare the Cabbage: Finely shred the cabbage using a sharp knife or a food processor. If you’re using carrots, grate them finely as well.
  2. Mix the Veggies: In a large bowl, add the shredded cabbage, grated carrot, and chopped onion (if you’re using it). Toss everything together to combine.
  3. Make the Dressing: In a small bowl, whisk together the mayonnaise, sugar, lemon juice, apple cider vinegar, salt, pepper, and mustard powder until smooth and well combined.
  4. Combine: Pour the dressing over the cabbage mixture and toss well to coat everything evenly.
  5. Chill: Cover the coleslaw and refrigerate for at least 1 hour before serving to let the flavors meld together.
  6. Serve: Enjoy your homemade, KFC-style coleslaw as a side dish with fried chicken, sandwiches, or anything you like!

Tip: For the best texture and flavor, let it sit in the fridge for a few hours or overnight
