Keto Zucchini No Noodle Lasagna

Ingredients

  • 2 medium zucchinis (sliced lengthwise into thin strips)
  • 1 lb ground beef (or ground turkey)
  • 1 cup marinara sauce (low-carb, sugar-free)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat Oven: Set to 375°F (190°C).
  2. Prepare Zucchini: Slice zucchini into thin strips. Lightly salt them and let sit for 10 minutes to release moisture. Pat dry with a paper towel.
  3. Cook Meat: Heat olive oil in a pan, sauté garlic, then add ground beef. Cook until browned. Drain excess fat. Add marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  4. Mix Ricotta Filling: In a bowl, mix ricotta cheese, Parmesan, egg, and a pinch of black pepper.
  5. Assemble Lasagna:
    • Spread a thin layer of meat sauce at the bottom of a baking dish.
    • Layer zucchini slices over the sauce.
    • Spread a layer of ricotta mixture.
    • Sprinkle mozzarella cheese.
    • Repeat layers until all ingredients are used, ending with mozzarella on top.
  6. Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until cheese is golden and bubbly.
  7. Rest & Serve: Let it sit for 10 minutes before slicing. Enjoy!
