Keto Zucchini No Noodle Lasagna

Ingredients
- 2 medium zucchinis (sliced lengthwise into thin strips)
- 1 lb ground beef (or ground turkey)
- 1 cup marinara sauce (low-carb, sugar-free)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic (minced)
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat Oven: Set to 375°F (190°C).
- Prepare Zucchini: Slice zucchini into thin strips. Lightly salt them and let sit for 10 minutes to release moisture. Pat dry with a paper towel.
- Cook Meat: Heat olive oil in a pan, sauté garlic, then add ground beef. Cook until browned. Drain excess fat. Add marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Mix Ricotta Filling: In a bowl, mix ricotta cheese, Parmesan, egg, and a pinch of black pepper.
- Assemble Lasagna:
- Spread a thin layer of meat sauce at the bottom of a baking dish.
- Layer zucchini slices over the sauce.
- Spread a layer of ricotta mixture.
- Sprinkle mozzarella cheese.
- Repeat layers until all ingredients are used, ending with mozzarella on top.
- Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until cheese is golden and bubbly.
- Rest & Serve: Let it sit for 10 minutes before slicing. Enjoy!
