2 medium zucchinis (sliced lengthwise into thin strips)
1 lb ground beef (or ground turkey)
1 cup marinara sauce (low-carb, sugar-free)
1 cup ricotta cheese
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 egg
2 cloves garlic (minced)
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
1 tbsp olive oil
Instructions
Preheat Oven: Set to 375°F (190°C).
Prepare Zucchini: Slice zucchini into thin strips. Lightly salt them and let sit for 10 minutes to release moisture. Pat dry with a paper towel.
Cook Meat: Heat olive oil in a pan, sauté garlic, then add ground beef. Cook until browned. Drain excess fat. Add marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
Mix Ricotta Filling: In a bowl, mix ricotta cheese, Parmesan, egg, and a pinch of black pepper.
Assemble Lasagna:
Spread a thin layer of meat sauce at the bottom of a baking dish.
Layer zucchini slices over the sauce.
Spread a layer of ricotta mixture.
Sprinkle mozzarella cheese.
Repeat layers until all ingredients are used, ending with mozzarella on top.
Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until cheese is golden and bubbly.
Rest & Serve: Let it sit for 10 minutes before slicing. Enjoy!
