Keto Wet Burritos

Ingredients:
For the burritos:
- 1 lb ground beef
- 1 tablespoon olive oil
- 1/2 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup enchilada sauce (sugar-free and low carb)
- 4 low carb tortillas (about 6 inches in diameter)
- 1 cup shredded cheddar cheese
For the topping:
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced tomatoes
- 2 tablespoons sliced black olives (optional)
- Sliced jalapeños (optional)
Instructions:
- Prepare the Ground Beef:
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add ground beef, breaking it up with a spatula. Cook until browned.
- Stir in chili powder, cumin, paprika, salt, and pepper. Cook for another 2-3 minutes until well combined and fragrant.
- Add 1/2 cup of enchilada sauce to the ground beef mixture. Stir well and simmer for 5-7 minutes until the sauce thickens slightly. Remove from heat.
- Assemble the Burritos:
- Preheat the oven to 350°F (175°C).
- Warm the low carb tortillas according to package instructions.
- Divide the ground beef mixture evenly among the tortillas, placing the filling in the center. Sprinkle shredded cheese over the beef mixture.
- Roll up the tortillas tightly, folding in the sides as you go, to form burritos.
- Bake the Burritos:
- Place the burritos seam-side down in a baking dish.
- Pour the remaining 1/2 cup of enchilada sauce over the burritos.
- Sprinkle additional cheese on top if desired.
- Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let cool for a few minutes.
- Top each burrito with sour cream, chopped cilantro, diced tomatoes, sliced black olives, and jalapeños if desired.
- Serve warm and enjoy!
