Keto Unstuffed Peppers


Ingredients:
2 green peppers
1 pound ground beef
1 14.5oz can diced tomatoes
1 10oz bag cauliflower rice – cooked
8 oz cheddar cheese – shredded
Directions:
– preheat oven to 375 degrees.
– chop green peppers into bite sized pieces. Add to 11×17 casserole dish. Top with salt & pepper.
– cook for 5 minutes.
– brown ground beef. Drain.
– mix in diced tomatoes.
– mix in cauliflower rice.
– mix in half of the cheese.
– stir together.
– pour mixture into casserole dish.
– top with the remaining cheese.
– bake for 30 minutes.
– Enjoy!
