Keto Turkey Sausage Mini Frittatas

Ingredients:
- 6 large eggs
- ½ cup heavy cream (or full-fat coconut milk for dairy-free)
- ½ cup shredded cheddar cheese (or your favorite cheese)
- ½ cup cooked ground turkey sausage (or turkey sausage crumbles)
- ¼ cup diced bell peppers (optional)
- 2 tbsp chopped onions (optional)
- Salt & pepper to taste
- ½ tsp garlic powder
- ½ tsp paprika
- Olive oil or non-stick spray for greasing
Instructions:
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin with olive oil or non-stick spray.
- Cook sausage in a skillet until browned and fully cooked. Set aside to cool slightly.
- In a large bowl, whisk together eggs, heavy cream, salt, pepper, garlic powder, and paprika.
- Stir in the cheese, turkey sausage, bell peppers, and onions (if using).
- Pour the mixture evenly into the muffin tin, filling each cup about ¾ full.
- Bake for 18–22 minutes, or until the tops are set and slightly golden.
- Let them cool slightly before removing. Serve warm or store in the fridge for up to 5 days.
🔥 Tips:
- Great for freezing! Just reheat in the microwave for 30–60 seconds.
- Add spinach, mushrooms, or jalapeños for extra flavor and nutrients.
