Keto Turkey Lettuce Wraps

Ingredients:

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, finely chopped
  • 1 cup mushrooms, finely chopped
  • 1/4 cup soy sauce or coconut aminos
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp ginger, grated
  • 1 tsp chili paste or sriracha (optional for heat)
  • 2 green onions, thinly sliced
  • 1 head of butter lettuce or romaine lettuce, leaves separated
  • Sesame seeds (optional for garnish)

Instructions:

  1. Cook the Turkey:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the ground turkey and cook until it’s browned and fully cooked, breaking it up into small pieces with a spoon.
  2. Add the Vegetables:
    • Add the chopped onion, garlic, bell pepper, and mushrooms to the skillet.
    • Cook for about 5-7 minutes until the vegetables are tender.
  3. Add the Sauce:
    • In a small bowl, mix together the soy sauce (or coconut aminos), rice vinegar, sesame oil, grated ginger, and chili paste (if using).
    • Pour this mixture into the skillet with the turkey and vegetables.
    • Stir to combine and let it cook for another 2-3 minutes, allowing the flavors to meld together.
  4. Assemble the Wraps:
    • Spoon the turkey mixture into the center of each lettuce leaf.
    • Sprinkle with sliced green onions and sesame seeds if desired.
  5. Serve:
    • Serve the lettuce wraps immediately. Enjoy!

Tips:

  • You can add other low-carb veggies like shredded carrots, zucchini, or water chestnuts for added crunch.
  • To make it spicier, add more chili paste or sriracha.
  • These wraps can be served as an appetizer or a main dish, depending on the portion size.
