Ingredients:
For the Crust:
- 1 ½ cups almond flour
- ¼ cup grated Parmesan cheese
- ¼ cup butter, melted
- 1 egg
- ¼ teaspoon salt
For the Filling:
- 1 lb (450g) ground beef (or ground turkey if you prefer)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade; make sure it’s low-carb)
- ½ cup tomato sauce (no added sugar)
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- ¼ cup sour cream
- ½ cup salsa (make sure it’s low-carb or sugar-free)

Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare the Crust:
- In a medium bowl, mix the almond flour, Parmesan cheese, melted butter, egg, and salt until well combined.
- Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish.
- Bake the crust for 10 minutes, then remove from the oven and set aside.
- Cook the Filling:
- In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent.
- Stir in the taco seasoning and tomato sauce. Let the mixture simmer for about 5 minutes until everything is well combined and heated through.
- Assemble the Pie:
- Spread the beef mixture evenly over the pre-baked crust.
- Sprinkle shredded cheddar cheese on top.
- Bake the Pie:
- Return the pie to the oven and bake for another 15 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Let the pie cool for a few minutes before serving.
- Top with shredded lettuce, a dollop of sour cream, and a spoonful of salsa.
