Ingredients:

For the Crust:

  • 1 ½ cups almond flour
  • ¼ cup grated Parmesan cheese
  • ¼ cup butter, melted
  • 1 egg
  • ¼ teaspoon salt

For the Filling:

  • 1 lb (450g) ground beef (or ground turkey if you prefer)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade; make sure it’s low-carb)
  • ½ cup tomato sauce (no added sugar)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • ¼ cup sour cream
  • ½ cup salsa (make sure it’s low-carb or sugar-free)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Crust:
    • In a medium bowl, mix the almond flour, Parmesan cheese, melted butter, egg, and salt until well combined.
    • Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish.
    • Bake the crust for 10 minutes, then remove from the oven and set aside.
  3. Cook the Filling:
    • In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
    • Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent.
    • Stir in the taco seasoning and tomato sauce. Let the mixture simmer for about 5 minutes until everything is well combined and heated through.
  4. Assemble the Pie:
    • Spread the beef mixture evenly over the pre-baked crust.
    • Sprinkle shredded cheddar cheese on top.
  5. Bake the Pie:
    • Return the pie to the oven and bake for another 15 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Let the pie cool for a few minutes before serving.
    • Top with shredded lettuce, a dollop of sour cream, and a spoonful of salsa.
