- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet (or 2 tablespoons) taco seasoning (make sure it’s low-carb or homemade)
- 1 cup salsa (choose a low-carb brand or make your own)
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup cauliflower rice (optional, for added texture)
- 1 cup diced bell peppers (optional)
- 1 cup chopped tomatoes (optional)
- 1/4 cup chopped fresh cilantro (optional, for garnish)
- Salt and pepper to taste
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Cook Meat: In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat if necessary.
- Add Vegetables: Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent.
- Season: Stir in the taco seasoning and cook for another minute or so, allowing the spices to coat the meat.
- Add Salsa: Mix in the salsa, and if you’re using cauliflower rice, bell peppers, or tomatoes, add them to the skillet. Cook for a few minutes until the mixture is well combined and heated through.
- Layer: In a casserole dish, spread the beef mixture evenly.
- Add Sour Cream: Dollop sour cream over the beef mixture, then gently spread it out.
- Add Cheese: Sprinkle shredded cheddar and mozzarella cheese evenly over the top.
- Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Let it cool slightly before garnishing with chopped cilantro, if desired. Serve hot.
