KETO TACO CASSEROLE

Ingredients:

  • 1 lb ground beef (or ground turkey for a lighter option)
  • 1 small onion, diced
  • 1 packet of taco seasoning (or homemade seasoning – see below)
  • 1 can (10 oz) diced tomatoes with green chilies (or use fresh if preferred)
  • 1 cup sour cream
  • 1 ½ cups shredded cheddar cheese (or Mexican blend)
  • 1 ½ cups shredded lettuce
  • ½ cup diced tomatoes (optional, for topping)
  • ¼ cup sliced green onions (optional, for topping)
  • 1 avocado (optional, for topping)
  • Salt and pepper to taste

Taco Seasoning (if making homemade):

  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp ground black pepper
  • ½ tsp salt
  • ½ tsp crushed red pepper flakes (optional, for heat)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground meat:
    In a large skillet, cook the ground beef (or turkey) over medium heat until browned. Drain any excess fat. Add the diced onion and cook for another 2-3 minutes until softened.
  3. Add the seasoning:
    Stir in the taco seasoning (or homemade seasoning blend) and the diced tomatoes with green chilies. Simmer for 5 minutes to allow the flavors to meld together. Taste and adjust seasoning with salt and pepper if needed.
  4. Prepare the casserole:
    In a casserole dish (about 9×9 inches or similar), spread the ground beef mixture evenly as the base layer.
  5. Add sour cream:
    Spread a layer of sour cream over the meat mixture.
  6. Top with cheese:
    Sprinkle the shredded cheddar cheese evenly on top of the sour cream layer.
  7. Bake the casserole:
    Place the casserole dish in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Serve and garnish:
    Once out of the oven, let it cool for a few minutes. Top with shredded lettuce, diced tomatoes, green onions, and avocado for extra flavor and texture.
