KETO TACO CASSEROLE

Ingredients:
- 1 lb ground beef (or ground turkey for a lighter option)
- 1 small onion, diced
- 1 packet of taco seasoning (or homemade seasoning – see below)
- 1 can (10 oz) diced tomatoes with green chilies (or use fresh if preferred)
- 1 cup sour cream
- 1 ½ cups shredded cheddar cheese (or Mexican blend)
- 1 ½ cups shredded lettuce
- ½ cup diced tomatoes (optional, for topping)
- ¼ cup sliced green onions (optional, for topping)
- 1 avocado (optional, for topping)
- Salt and pepper to taste
Taco Seasoning (if making homemade):
- 1 tbsp chili powder
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried oregano
- ½ tsp ground black pepper
- ½ tsp salt
- ½ tsp crushed red pepper flakes (optional, for heat)

Instructions:
- Preheat the oven to 375°F (190°C).
- Cook the ground meat:
In a large skillet, cook the ground beef (or turkey) over medium heat until browned. Drain any excess fat. Add the diced onion and cook for another 2-3 minutes until softened. - Add the seasoning:
Stir in the taco seasoning (or homemade seasoning blend) and the diced tomatoes with green chilies. Simmer for 5 minutes to allow the flavors to meld together. Taste and adjust seasoning with salt and pepper if needed. - Prepare the casserole:
In a casserole dish (about 9×9 inches or similar), spread the ground beef mixture evenly as the base layer. - Add sour cream:
Spread a layer of sour cream over the meat mixture. - Top with cheese:
Sprinkle the shredded cheddar cheese evenly on top of the sour cream layer. - Bake the casserole:
Place the casserole dish in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly. - Serve and garnish:
Once out of the oven, let it cool for a few minutes. Top with shredded lettuce, diced tomatoes, green onions, and avocado for extra flavor and texture.
