  • 1 lb (450 g) ground beef (or ground chicken)
  • 2 tbsp olive oil (if meat is lean)
  • 1 medium onion, finely chopped
  • 2–3 bell peppers (any color), chopped
  • 3 cloves garlic, minced
  • 1 can (14–15 oz) crushed tomatoes (sugar-free)
  • 4 cups beef broth (or chicken broth)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp chili flakes (optional)
  • Salt & black pepper to taste
  • 1 cup cauliflower rice (optional but very filling)

  • Shredded cheddar or mozzarella
  • Sour cream or Greek yogurt
  • Fresh herbs

  1. Heat oil in a large pot. Add onion and garlic; sauté until soft.
  2. Add ground beef. Cook until browned; drain excess fat if needed.

  5. Add cauliflower rice (if using).
