Keto Stuffed Pepper Soup
Ingredients:
- 1 lb ground beef
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 1 cup cauliflower rice
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large pot or Dutch oven, heat olive oil over medium-high heat.
- Add ground beef and cook until browned, breaking it up into crumbles as it cooks.
- Add diced onions and garlic to the pot. Cook until onions are translucent.
- Stir in diced tomatoes (with juices), Italian seasoning, paprika, salt, and pepper. Cook for 5 minutes, allowing flavors to blend.
- Add diced bell peppers and cauliflower rice to the pot. Stir to combine.
- Pour in beef broth. Bring to a boil, then reduce heat to medium-low. Simmer for 20-25 minutes, or until peppers are tender and cauliflower rice is cooked through.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with chopped fresh parsley.
