Keto Stuffed Pepper Soup

Ingredients:

  • 1 lb ground beef
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup cauliflower rice
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat.
  2. Add ground beef and cook until browned, breaking it up into crumbles as it cooks.
  3. Add diced onions and garlic to the pot. Cook until onions are translucent.
  4. Stir in diced tomatoes (with juices), Italian seasoning, paprika, salt, and pepper. Cook for 5 minutes, allowing flavors to blend.
  5. Add diced bell peppers and cauliflower rice to the pot. Stir to combine.
  6. Pour in beef broth. Bring to a boil, then reduce heat to medium-low. Simmer for 20-25 minutes, or until peppers are tender and cauliflower rice is cooked through.
  7. Taste and adjust seasoning if needed.
  8. Serve hot, garnished with chopped fresh parsley.
