Keto Stuffed Pepper Casserole

Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 onion, diced
  • 3-4 bell peppers, chopped (any color)
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (no sugar added)
  • 1 cup riced cauliflower
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1-2 tbsp olive oil (for cooking)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook Beef and Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until it becomes translucent. Add the ground beef (or turkey) and cook until browned, breaking it apart with a spoon. Add minced garlic and cook for an additional minute.
  3. Add Peppers and Tomatoes: Stir in the chopped bell peppers and cook for about 5 minutes until they start to soften. Add the diced tomatoes (with their juices), riced cauliflower, oregano, basil, salt, and pepper. Stir to combine and cook for another 5 minutes.
  4. Transfer to Baking Dish: Transfer the mixture to a greased 9×13-inch baking dish.
  5. Add Cheese: Sprinkle shredded cheddar cheese and grated Parmesan cheese evenly over the top of the casserole.
  6. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the peppers are tender.
  7. Serve: Let the casserole cool for a few minutes before serving. Enjoy!
