Keto Stuffed Pepper Casserole
Ingredients:
- 1 lb (450 g) ground beef (or ground turkey, pork, or chicken)
- 1 tablespoon olive oil (optional, for cooking the ground beef)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3-4 bell peppers (colors of your choice, preferably a mix for variety), chopped
- 1 can (14.5 oz) diced tomatoes (or 2 cups fresh tomatoes, chopped)
- 1 cup cauliflower rice (or regular rice if you’re not strictly keto)
- 1 cup shredded cheddar cheese (or cheese of your choice, like Monterey Jack or mozzarella)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and black pepper to taste
- 1/2 cup beef or chicken broth (optional, for extra moisture)
- Fresh parsley or basil for garnish (optional)

Instructions:
- Preheat your oven to 375°F (190°C).
- Cook the Ground Beef:
- In a large skillet over medium heat, heat the olive oil (if using). Add the ground beef and cook until browned. Break it up into small pieces with a spoon as it cooks.
- Once browned, drain any excess fat if necessary.
- Add Vegetables:
- Add the diced onion and minced garlic to the skillet with the ground beef. Cook until the onion is translucent and the garlic is fragrant.
- Stir in the chopped bell peppers and cook for about 5-7 minutes until they start to soften.
- Mix in Additional Ingredients:
- Stir in the diced tomatoes, cauliflower rice, oregano, basil, salt, and black pepper. If using, add the beef or chicken broth to keep the mixture moist.
- Cook for another 5 minutes to allow the flavors to meld together.
- Transfer to a Casserole Dish:
- Pour the beef and pepper mixture into a 9×13-inch casserole dish or another similarly sized oven-safe dish. Spread it out evenly.
- Add Cheese:
- Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
- Bake:
- Place the casserole in the preheated oven and bake for about 20 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
- Garnish and Serve:
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley or basil if desired.
- Serve warm and enjoy!
