Keto Sous Vide Egg Bites

Ingredients (makes about 6–8 bites):

  • 4 large eggs
  • ½ cup cottage cheese (full-fat)
  • ¼ cup heavy cream
  • ½ cup shredded cheddar cheese (or your favorite cheese)
  • ¼ cup cooked bacon bits (or diced ham, sausage, etc.)
  • Salt & pepper to taste
  • Optional: chopped spinach, bell peppers, or jalapeños

Instructions:

  1. Prep Sous Vide:
    • Fill your sous vide container and preheat to 172°F (78°C).
  2. Blend Base:
    • In a blender, combine eggs, cottage cheese, heavy cream, salt, and pepper. Blend until smooth (about 20 seconds).
  3. Assemble:
    • Lightly grease silicone egg bite molds or small mason jars.
    • Pour the egg mixture into molds/jars about ¾ full.
    • Add bacon bits, cheese, and any optional veggies evenly into each.
  4. Seal:
    • Cover tightly with foil or use lids (finger-tight if using jars).
  5. Sous Vide:
    • Gently lower the molds/jars into the water bath.
    • Cook for 1 hour.
  6. Finish & Serve:
    • Carefully remove from water and let cool slightly.
    • Remove from molds and enjoy warm or refrigerate for up to 5 days.

💡 Tips:

  • You can reheat in the microwave for 30–45 seconds.
  • Great for grab-and-go breakfast or post-workout snacks!
  • To make it spicy, add crushed red pepper or chipotle powder.
