Ingredients (makes about 6–8 bites):
- 4 large eggs
- ½ cup cottage cheese (full-fat)
- ¼ cup heavy cream
- ½ cup shredded cheddar cheese (or your favorite cheese)
- ¼ cup cooked bacon bits (or diced ham, sausage, etc.)
- Salt & pepper to taste
- Optional: chopped spinach, bell peppers, or jalapeños
Instructions:
- Prep Sous Vide:
- Fill your sous vide container and preheat to 172°F (78°C).
- Blend Base:
- In a blender, combine eggs, cottage cheese, heavy cream, salt, and pepper. Blend until smooth (about 20 seconds).
- Assemble:
- Lightly grease silicone egg bite molds or small mason jars.
- Pour the egg mixture into molds/jars about ¾ full.
- Add bacon bits, cheese, and any optional veggies evenly into each.
- Seal:
- Cover tightly with foil or use lids (finger-tight if using jars).
- Sous Vide:
- Gently lower the molds/jars into the water bath.
- Cook for 1 hour.
- Finish & Serve:
- Carefully remove from water and let cool slightly.
- Remove from molds and enjoy warm or refrigerate for up to 5 days.
💡 Tips:
- You can reheat in the microwave for 30–45 seconds.
- Great for grab-and-go breakfast or post-workout snacks!
- To make it spicy, add crushed red pepper or chipotle powder.
