Keto Snickers Brownies

Ingredients:

Brownie Layer:

  • 1/2 cup almond flour
  • 1/4 cup cocoa powder (unsweetened)
  • 1/2 cup erythritol (or another keto-friendly sweetener)
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract

Peanut Layer:

  • 1/2 cup salted peanuts (chopped)

Caramel Layer:

  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 1/4 cup erythritol (or another keto-friendly sweetener)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Chocolate Topping:

  • 1/2 cup sugar-free chocolate chips
  • 1 tablespoon coconut oil

Instructions:

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper or grease it well.
  2. Prepare Brownie Layer:
    • In a medium bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, and salt.
    • In another bowl, beat the eggs and then add the melted butter and vanilla extract. Mix well.
    • Combine the wet ingredients with the dry ingredients and stir until fully incorporated.
    • Pour the brownie batter into the prepared baking pan and spread it evenly.
  3. Bake Brownies:
    • Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center comes out mostly clean. Do not overbake.
    • Allow the brownies to cool completely in the pan.
  4. Prepare Caramel Layer:
    • In a small saucepan over medium heat, combine the heavy cream, butter, and erythritol. Stir continuously until the mixture begins to thicken and turn a light golden brown color (about 10-15 minutes).
    • Remove from heat and stir in vanilla extract and a pinch of salt.
    • Allow the caramel to cool slightly, then pour it over the cooled brownies.
    • Sprinkle the chopped peanuts over the caramel layer.
  5. Prepare Chocolate Topping:
    • In a microwave-safe bowl, melt the sugar-free chocolate chips and coconut oil together in 30-second increments, stirring in between until smooth.
    • Pour the melted chocolate over the caramel and peanut layer, spreading it evenly.
  6. Chill and Serve:
    • Refrigerate the brownies for at least 1 hour to allow the layers to set.
    • Once set, remove from the fridge and cut into squares.
