Keto Sloppy Joe Casserole

Ingredients:-

For the Sloppy Joe filling:

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 small green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce (sugar-free)
  • 2 tbsp tomato paste (sugar-free)
  • 1 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp yellow mustard
  • 1 tbsp keto-friendly sweetener (like erythritol or stevia)
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the casserole topping:-

  • 2 cups shredded cheddar cheese
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted butter

Instructions:-

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the Sloppy Joe filling:
    • In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
    • Add the chopped onion and bell pepper to the skillet. Cook for about 5 minutes, until softened.
    • Stir in the minced garlic and cook for another minute.
    • Add the tomato sauce, tomato paste, Worcestershire sauce, apple cider vinegar, yellow mustard, keto sweetener, smoked paprika, salt, and black pepper. Stir to combine.
    • Let the mixture simmer for about 10 minutes, until it thickens slightly.
  3. Prepare the casserole topping:
    • In a medium bowl, whisk together the almond flour, coconut flour, baking powder, garlic powder, onion powder, and salt.
    • In another bowl, whisk the eggs, almond milk, and melted butter.
    • Combine the wet ingredients with the dry ingredients, stirring until a thick batter forms.
  4. Assemble the casserole:
    • Transfer the Sloppy Joe filling to a greased 9×13-inch baking dish.
    • Sprinkle 1 cup of shredded cheddar cheese over the filling.
    • Spoon the batter evenly over the top of the cheese layer, spreading it out to cover the entire dish.
    • Sprinkle the remaining cup of shredded cheddar cheese over the batter.
  5. Bake the casserole:
    • Place the dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and set.
  6. Serve:
