Keto Sloppy Joe Casserole
Ingredients:-
For the Sloppy Joe filling:
- 1 lb ground beef
- 1 small onion, chopped
- 1 small green bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce (sugar-free)
- 2 tbsp tomato paste (sugar-free)
- 1 tbsp Worcestershire sauce
- 1 tbsp apple cider vinegar
- 1 tbsp yellow mustard
- 1 tbsp keto-friendly sweetener (like erythritol or stevia)
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
For the casserole topping:-
- 2 cups shredded cheddar cheese
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 tsp baking powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 3 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup melted butter
Instructions:-
- Preheat the oven to 350°F (175°C).
- Prepare the Sloppy Joe filling:
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the chopped onion and bell pepper to the skillet. Cook for about 5 minutes, until softened.
- Stir in the minced garlic and cook for another minute.
- Add the tomato sauce, tomato paste, Worcestershire sauce, apple cider vinegar, yellow mustard, keto sweetener, smoked paprika, salt, and black pepper. Stir to combine.
- Let the mixture simmer for about 10 minutes, until it thickens slightly.
- Prepare the casserole topping:
- In a medium bowl, whisk together the almond flour, coconut flour, baking powder, garlic powder, onion powder, and salt.
- In another bowl, whisk the eggs, almond milk, and melted butter.
- Combine the wet ingredients with the dry ingredients, stirring until a thick batter forms.
- Assemble the casserole:
- Transfer the Sloppy Joe filling to a greased 9×13-inch baking dish.
- Sprinkle 1 cup of shredded cheddar cheese over the filling.
- Spoon the batter evenly over the top of the cheese layer, spreading it out to cover the entire dish.
- Sprinkle the remaining cup of shredded cheddar cheese over the batter.
- Bake the casserole:
- Place the dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and set.
- Serve:
