Keto Sheet Pan Pizza

Ingredients

For the Crust:

  • 2 cups almond flour
  • 1 cup shredded mozzarella cheese
  • 2 oz cream cheese, softened
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp garlic powder (optional)
  • 1 tsp Italian seasoning (optional)
  • Salt and pepper to taste

For the Toppings:

  • 1 cup pizza sauce (low-sugar)
  • 2 cups shredded mozzarella cheese (for topping)
  • Toppings of choice (pepperoni, bell peppers, mushrooms, olives, cooked sausage, etc.)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Make the Crust:
    • In a microwave-safe bowl, combine the almond flour, mozzarella cheese, and cream cheese. Microwave on high for about 1 minute, stir, and then microwave for another 30 seconds until fully melted.
    • Mix in the eggs, baking powder, garlic powder, Italian seasoning, salt, and pepper. Stir until a dough forms.
    • Spread the dough onto a parchment-lined sheet pan, forming a rectangle about 1/4 inch thick.
  3. Pre-Bake the Crust:
    • Bake the crust for 12-15 minutes, or until golden brown.
  4. Add Sauce and Toppings:
    • Remove the crust from the oven and spread the pizza sauce evenly over the top.
    • Sprinkle shredded mozzarella cheese and your choice of toppings.
  5. Bake Again:
    • Return the pizza to the oven and bake for another 10-15 minutes, until the cheese is bubbly and slightly golden.
