Keto Seven-layer Salad
Ingredients
Layer 1:
- 6 cups of mixed greens (e.g., spinach, arugula, and romaine)
Layer 2:
- 1 cup cherry tomatoes, halved
Layer 3:
- 1 cup cucumber, diced
Layer 4:
- 1 cup avocado, diced
Layer 5:
- 1 cup hard-boiled eggs, chopped
Layer 6:
- 1 cup cooked bacon, crumbled
Layer 7:
- 1 cup shredded cheddar cheese
Dressing
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh dill, chopped (optional)
- Salt and pepper to taste
Instructions
- Prepare the Base: In a large, clear glass bowl or a trifle dish, layer the mixed greens evenly at the bottom.
- Add the Layers: Carefully layer the cherry tomatoes, cucumbers, avocado, hard-boiled eggs, bacon, and shredded cheddar cheese on top of the greens, one layer at a time.
- Make the Dressing: In a medium bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, Dijon mustard, dill (if using), salt, and pepper until smooth.
- Add the Dressing: Spread the dressing evenly over the top layer of the salad. Use a spatula to ensure it covers the entire surface.
- Chill: Cover the salad with plastic wrap and refrigerate for at least 1-2 hours before serving to allow the flavors to meld together.
- Serve: Before serving, you can garnish the top with additional bacon crumbles, shredded cheese, or chopped green onions if desired. Serve chilled and enjoy!
