Ingredients:

  • 2 large eggs
  • 1 tablespoon heavy cream (or unsweetened almond milk for dairy-free)
  • 1 tablespoon butter (or coconut oil for dairy-free)
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, cooked bacon bits, chopped chives, or diced avocado

Instructions:

  1. Prepare the Mug:
    • Choose a microwave-safe mug. Add the butter or coconut oil to the mug and microwave for about 20-30 seconds, until melted.
  2. Mix the Ingredients:
    • Crack the eggs into the mug. Add the heavy cream or almond milk. Season with salt and pepper. Whisk everything together with a fork until well combined.
  3. Microwave the Eggs:
    • Microwave the mixture on high for 30 seconds. Remove the mug and stir the eggs with the fork.
