Keto Sausage and Cheese Breakfast Pizza

Ingredients:

For the Crust:

  • 1 1/2 cups shredded mozzarella cheese
  • 3/4 cup almond flour
  • 1 tablespoon cream cheese
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)
  • 1 large egg

For the Toppings:

  • 1/2 pound breakfast sausage (crumbled and cooked)
  • 4 large eggs
  • 1/4 cup heavy cream
  • 1 cup shredded cheddar cheese (or any cheese of your choice)
  • Salt and pepper to taste
  • Fresh chives or green onions, chopped (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Make the Crust:
    • In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave on high for 1 minute, stir, and then microwave for an additional 30 seconds or until the cheese is fully melted and combined.
    • Add the almond flour, garlic powder, onion powder, and egg to the cheese mixture. Stir well to form a dough. If it’s too sticky, you can add a little more almond flour.
    • Place the dough between two sheets of parchment paper and roll it out into a thin, even layer about 1/4 inch thick.
    • Transfer the rolled-out dough to the prepared baking sheet. Use a fork to poke holes all over the dough to prevent it from bubbling up.
    • Bake the crust in the preheated oven for about 8-10 minutes or until it turns golden brown.
  3. Prepare the Toppings:
    • While the crust is baking, cook the breakfast sausage in a skillet over medium heat until browned and fully cooked. Drain any excess fat and set aside.
    • In a bowl, whisk together the eggs, heavy cream, salt, and pepper.
  4. Assemble the Pizza:
    • Once the crust is done baking, remove it from the oven and reduce the oven temperature to 375°F (190°C).
    • Spread the cooked sausage evenly over the crust.
    • Pour the egg mixture over the sausage.
    • Sprinkle the shredded cheddar cheese on top.
  5. Bake the Pizza:
    • Return the pizza to the oven and bake for an additional 10-15 minutes or until the eggs are set and the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Remove the pizza from the oven and let it cool for a few minutes. Garnish with chopped chives or green onions if desired.
    • Slice and serve warm.
