Keto Salmon with Asparagus & Mushrooms

Ingredients:
- 2 salmon fillets (around 150–200g each)
- 1 bunch of asparagus (trimmed)
- 1 cup mushrooms (sliced – cremini, button, or any you like)
- 2 tbsp olive oil or butter (for cooking)
- 1 tbsp garlic (minced)
- Salt & pepper to taste
- 1 tsp paprika or chili flakes (optional)
- 1 tbsp lemon juice
- Fresh parsley or dill for garnish (optional)
🔥 Instructions:
- Prep your pan: Heat 1 tbsp olive oil or butter in a large skillet over medium heat.
- Cook salmon:
- Season salmon with salt, pepper, and paprika.
- Place it skin-side down in the pan. Cook for about 4–5 minutes per side, or until it’s golden and flakes easily. Remove and set aside.
- Sauté veggies:
- In the same pan, add remaining 1 tbsp oil/butter.
- Toss in garlic, mushrooms, and asparagus. Sauté for 5–7 minutes until tender and slightly golden. Add salt & pepper to taste.
- Bring it together:
- Add the salmon back into the pan just for a minute to warm up.
- Squeeze lemon juice over everything.
- Serve hot:
- Plate the salmon with the veggies, garnish with herbs if you like, and enjoy your healthy keto meal!
