Keto Salmon with Asparagus & Mushrooms

Ingredients:

  • 2 salmon fillets (around 150–200g each)
  • 1 bunch of asparagus (trimmed)
  • 1 cup mushrooms (sliced – cremini, button, or any you like)
  • 2 tbsp olive oil or butter (for cooking)
  • 1 tbsp garlic (minced)
  • Salt & pepper to taste
  • 1 tsp paprika or chili flakes (optional)
  • 1 tbsp lemon juice
  • Fresh parsley or dill for garnish (optional)

🔥 Instructions:

  1. Prep your pan: Heat 1 tbsp olive oil or butter in a large skillet over medium heat.
  2. Cook salmon:
    • Season salmon with salt, pepper, and paprika.
    • Place it skin-side down in the pan. Cook for about 4–5 minutes per side, or until it’s golden and flakes easily. Remove and set aside.
  3. Sauté veggies:
    • In the same pan, add remaining 1 tbsp oil/butter.
    • Toss in garlic, mushrooms, and asparagus. Sauté for 5–7 minutes until tender and slightly golden. Add salt & pepper to taste.
  4. Bring it together:
    • Add the salmon back into the pan just for a minute to warm up.
    • Squeeze lemon juice over everything.
  5. Serve hot:
    • Plate the salmon with the veggies, garnish with herbs if you like, and enjoy your healthy keto meal!
