Keto Salmon Cakes

Ingredients:

  • 1 can (14 oz) salmon, drained and flaked (or cooked fresh salmon, about 1 cup flaked)
  • 1 large egg
  • 2 tbsp almond flour (or coconut flour)
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • 1 small garlic clove, minced
  • 2 green onions, finely chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil or avocado oil (for frying)
  • Optional: a squeeze of lemon juice

Instructions:

  1. In a mixing bowl, combine the flaked salmon, egg, almond flour, mayonnaise, mustard, dill, garlic, and green onions. Mix well.
  2. Season with salt and pepper to your taste. If you want a little zing, add a squeeze of lemon juice.
  3. Form the mixture into 4 small patties.
  4. Heat the oil in a skillet over medium heat.
  5. Cook the salmon cakes for about 3-4 minutes on each side until golden brown and cooked through.
  6. Remove from the skillet and place on paper towels to drain excess oil.
  7. Serve hot with a side of keto-friendly sauce like sour cream mixed with lemon and dill or a simple avocado mayo.
