Keto Rotel Tacos

Ingredients:

  • 1 lb ground beef (preferably lean)
  • 1 packet taco seasoning mix (make sure it’s keto-friendly or use homemade)
  • 1 can Rotel tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • Lettuce leaves or low-carb tortillas for serving
  • Optional toppings: sour cream, avocado slices, diced onions, cilantro

Instructions:

  1. Cook the Beef:
    • In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it apart with a spoon as it cooks.
  2. Add Seasoning:
    • Drain any excess fat from the skillet. Add the taco seasoning mix and stir to combine, following the package instructions for adding water if necessary.
  3. Add Rotel Tomatoes:
    • Stir in the can of Rotel tomatoes with green chilies. Cook for another 5-7 minutes, stirring occasionally, until heated through and the flavors meld together.
  4. Assemble Tacos:
    • If using lettuce leaves, wash and dry them. Spoon the beef mixture into the lettuce leaves, then top with shredded cheese, sour cream, avocado slices, and any other desired toppings.
