Keto Rotel Tacos
Ingredients:
- 1 lb ground beef (preferably lean)
- 1 packet taco seasoning mix (make sure it’s keto-friendly or use homemade)
- 1 can Rotel tomatoes with green chilies
- 1 cup shredded cheddar cheese
- Lettuce leaves or low-carb tortillas for serving
- Optional toppings: sour cream, avocado slices, diced onions, cilantro
Instructions:
- Cook the Beef:
- In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it apart with a spoon as it cooks.
- Add Seasoning:
- Drain any excess fat from the skillet. Add the taco seasoning mix and stir to combine, following the package instructions for adding water if necessary.
- Add Rotel Tomatoes:
- Stir in the can of Rotel tomatoes with green chilies. Cook for another 5-7 minutes, stirring occasionally, until heated through and the flavors meld together.
- Assemble Tacos:
- If using lettuce leaves, wash and dry them. Spoon the beef mixture into the lettuce leaves, then top with shredded cheese, sour cream, avocado slices, and any other desired toppings.
