Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, combine almond flour, coconut flour, baking powder, salt, and dried rosemary. If you’re using Parmesan cheese, add it to the mix.
- Combine Wet Ingredients: In another bowl, whisk together the eggs, melted butter (or coconut oil), and olive oil.
- Form Dough: Pour the wet ingredients into the dry ingredients and stir until well combined. The dough should be thick but manageable. If it’s too crumbly, you can add a little more melted butter or a splash of water.
- Shape Biscuits: Using your hands or a spoon, form the dough into small biscuit shapes and place them on the prepared baking sheet. They won’t spread much, so shape them as you want them to appear when baked.
- Bake: Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and firm to the touch.
- Cool: Let the biscuits cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Enjoy: Serve warm or at room temperature. They’re perfect as a side with soups and salads or enjoyed on their own!
Feel free to adjust the amount of rosemary to your taste, and experiment with other herbs and seasonings if you like. Enjoy your keto biscuits!
