Keto Pretzel Bites

Ingredients:

  • 1 1/2 cups almond flour
  • 1 tbsp baking powder
  • 1 tsp xanthan gum (optional, helps with texture)
  • 1/2 tsp salt
  • 1 cup shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 large egg
  • 1 tbsp melted butter (for brushing)
  • Coarse salt (for sprinkling)

For boiling solution:

  • 4 cups water
  • 2 tbsp baking soda

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a bowl, combine almond flour, baking powder, xanthan gum, and salt.
  3. Melt cheeses: In a microwave-safe bowl, combine mozzarella and cream cheese. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  4. Combine: Add melted cheese mixture to dry ingredients. Add the egg and mix until a dough forms. If it’s too sticky, refrigerate for 10-15 minutes.
  5. Shape pretzel bites: Roll the dough into a long rope (about 1/2 inch thick). Cut into 1-inch pieces and shape each into small pretzel bites (optional).
  6. Boil: Bring water and baking soda to a boil in a large pot. Carefully drop the pretzel bites into the boiling water for 30 seconds, then remove with a slotted spoon and place on baking sheet.
  7. Brush and sprinkle: Brush pretzel bites with melted butter and sprinkle with coarse salt.
  8. Bake: Bake for 12-15 minutes or until golden brown.
  9. Cool and enjoy! Let them cool a bit before serving.
