KETO PIZZA ROLL UPS

Ingredients:

  • For the dough:
    • 1 1/2 cups shredded mozzarella cheese
    • 2 oz cream cheese
    • 3/4 cup almond flour
    • 1 egg
    • 1/2 tsp Italian seasoning
    • 1/2 tsp garlic powder
    • Pinch of salt
  • For the filling:
    • 1/2 cup sugar-free marinara sauce
    • 1 cup shredded mozzarella cheese
    • 1/4 cup sliced pepperoni (or any other keto-friendly toppings like cooked sausage, bell peppers, etc.)
    • 1/2 tsp Italian seasoning
    • Optional: Additional toppings like olives, mushrooms, etc.

Instructions:

  1. Preheat oven: Preheat your oven to 375°F (190°C).
  2. Make the dough:
    • In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until completely melted and combined.
    • To the melted cheese mixture, add almond flour, egg, Italian seasoning, garlic powder, and a pinch of salt. Mix until a dough forms. If the dough becomes too stiff, you can microwave it for another 10-15 seconds to soften it up.
  3. Roll out the dough:
    • Place the dough between two sheets of parchment paper. Use a rolling pin to roll it out into a rectangle, about 1/4 inch thick.
  4. Add filling:
    • Spread a thin layer of marinara sauce over the dough, leaving a small border around the edges. Sprinkle shredded mozzarella cheese evenly over the sauce, then add your chosen toppings (e.g., pepperoni, sausage, vegetables). Sprinkle with Italian seasoning.
  5. Roll up:
    • Starting from one of the long sides of the rectangle, carefully roll the dough into a log shape. Use the parchment paper to help you roll it tightly.
  6. Slice and bake:
    • Using a sharp knife, slice the log into 1-inch thick pieces. Place the pieces on a baking sheet lined with parchment paper, leaving some space between each roll-up.
  7. Bake:
    • Bake in the preheated oven for 12-15 minutes, or until the roll-ups are golden brown and the cheese is bubbly.
  8. Serve:
