Keto Pizza Puffs

Ingredients:

  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 2 large eggs
  • 1 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup mini pepperoni slices (optional)
  • 1/2 cup grated Parmesan cheese (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Mixture: In a large bowl, mix together the shredded mozzarella cheese and softened cream cheese. Microwave for about 30 seconds, then stir until the mixture is smooth.
  3. Add Eggs: Add the eggs to the cheese mixture and mix until well combined.
  4. Incorporate Dry Ingredients: Add the almond flour, baking powder, garlic powder, dried oregano, salt, and black pepper. Mix until a dough forms.
  5. Add Pepperoni and Parmesan (Optional): Fold in the mini pepperoni slices and grated Parmesan cheese, if using.
  6. Shape the Puffs: Use a small cookie scoop or tablespoon to drop dough onto the prepared baking sheet, spacing them about 1 inch apart.
  7. Bake: Bake for 12-15 minutes, or until the puffs are golden brown and set.
  8. Cool: Let the pizza puffs cool on the baking sheet for a few minutes before serving.
