Keto Pea Soup

Ingredients:

  • 2 tbsp olive oil or butter
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 medium zucchini, chopped
  • 1 cup fresh spinach (or frozen)
  • 2 cups chicken or vegetable broth (unsweetened)
  • 1/4 cup heavy cream (optional for extra creaminess)
  • Salt & pepper to taste
  • Fresh parsley or mint (optional garnish)

🥄 Instructions:

  1. Sauté: In a pot, heat olive oil. Add onions and garlic, sauté until soft.
  2. Add veggies: Add chopped zucchini and spinach. Cook for 3–4 minutes.
  3. Simmer: Pour in the broth, bring to a boil, then reduce heat and simmer for 10–12 minutes until vegetables are tender.
  4. Blend: Use an immersion blender (or transfer to a blender) and blend until smooth.
  5. Creamy touch: Stir in heavy cream if using, then season with salt and pepper.
  6. Serve: Garnish with herbs and enjoy hot!
