Keto Pea Soup

Ingredients:
- 2 tbsp olive oil or butter
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 medium zucchini, chopped
- 1 cup fresh spinach (or frozen)
- 2 cups chicken or vegetable broth (unsweetened)
- 1/4 cup heavy cream (optional for extra creaminess)
- Salt & pepper to taste
- Fresh parsley or mint (optional garnish)
🥄 Instructions:
- Sauté: In a pot, heat olive oil. Add onions and garlic, sauté until soft.
- Add veggies: Add chopped zucchini and spinach. Cook for 3–4 minutes.
- Simmer: Pour in the broth, bring to a boil, then reduce heat and simmer for 10–12 minutes until vegetables are tender.
- Blend: Use an immersion blender (or transfer to a blender) and blend until smooth.
- Creamy touch: Stir in heavy cream if using, then season with salt and pepper.
- Serve: Garnish with herbs and enjoy hot!
