Keto Parmesan Meatloaf

Ingredients:

  • Meatloaf:
    • 1 lb ground beef
    • 1 lb ground pork
    • 1 cup grated Parmesan cheese
    • 1/2 cup almond flour
    • 1/4 cup chopped fresh parsley
    • 1/4 cup chopped fresh basil
    • 1/4 cup chopped onion
    • 2 cloves garlic, minced
    • 2 large eggs
    • 1/4 cup heavy cream
    • 1/4 cup sugar-free ketchup
    • 1 tbsp Worcestershire sauce
    • 1 tsp salt
    • 1/2 tsp black pepper
  • Topping:
    • 1/2 cup sugar-free ketchup
    • 1/4 cup grated Parmesan cheese
    • 1 tbsp olive oil
    • 1 tsp dried oregano
    • 1/2 tsp garlic powder

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Prepare the meat mixture:
    • In a large mixing bowl, combine the ground beef, ground pork, Parmesan cheese, almond flour, parsley, basil, onion, garlic, eggs, heavy cream, sugar-free ketchup, Worcestershire sauce, salt, and black pepper.
    • Mix well until all ingredients are thoroughly combined.
  3. Shape the meatloaf:
    • Transfer the meat mixture to a baking dish and shape it into a loaf.
  4. Prepare the topping:
    • In a small bowl, combine the sugar-free ketchup, grated Parmesan cheese, olive oil, dried oregano, and garlic powder.
    • Mix well and spread the topping evenly over the meatloaf.
  5. Bake the meatloaf:
    • Place the meatloaf in the preheated oven and bake for 60-70 minutes, or until the internal temperature reaches 160°F (71°C) and the meatloaf is cooked through.
  6. Rest and serve:
    • Allow the meatloaf to rest for about 10 minutes before slicing.
