Keto Parmesan Meatloaf
Ingredients:
- Meatloaf:
- 1 lb ground beef
- 1 lb ground pork
- 1 cup grated Parmesan cheese
- 1/2 cup almond flour
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 2 large eggs
- 1/4 cup heavy cream
- 1/4 cup sugar-free ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- Topping:
- 1/2 cup sugar-free ketchup
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder

Instructions:
- Preheat the oven: Preheat your oven to 375°F (190°C).
- Prepare the meat mixture:
- In a large mixing bowl, combine the ground beef, ground pork, Parmesan cheese, almond flour, parsley, basil, onion, garlic, eggs, heavy cream, sugar-free ketchup, Worcestershire sauce, salt, and black pepper.
- Mix well until all ingredients are thoroughly combined.
- Shape the meatloaf:
- Transfer the meat mixture to a baking dish and shape it into a loaf.
- Prepare the topping:
- In a small bowl, combine the sugar-free ketchup, grated Parmesan cheese, olive oil, dried oregano, and garlic powder.
- Mix well and spread the topping evenly over the meatloaf.
- Bake the meatloaf:
- Place the meatloaf in the preheated oven and bake for 60-70 minutes, or until the internal temperature reaches 160°F (71°C) and the meatloaf is cooked through.
- Rest and serve:
- Allow the meatloaf to rest for about 10 minutes before slicing.
