Keto Pancakes

Ingredients:
- 2 large eggs
- 2 oz cream cheese (softened)
- 1/4 cup almond flour
- 1/2 tsp baking powder
- 1/4 tsp vanilla extract
- 1/4 tsp cinnamon (optional)
- Pinch of salt
- Butter or coconut oil for cooking

Instructions:
- Blend the ingredients: In a bowl or blender, combine the eggs, softened cream cheese, almond flour, baking powder, vanilla extract, cinnamon (if using), and salt. Blend or whisk until smooth and the batter is slightly thick.
- Heat the pan: Heat a non-stick skillet or griddle over medium-low heat and add a little butter or coconut oil to coat the surface.
- Cook the pancakes: Pour about 1/4 cup of the batter onto the pan. Cook for 2-3 minutes on one side, until the edges start to look set, then flip and cook another 1-2 minutes on the other side, until golden brown.
- Serve: Serve the pancakes with sugar-free syrup, butter, or berries if desired.
