Keto Orange Chicken

Ingredients

For the Chicken:

  • 1 lb (450g) chicken thighs or breasts, cut into bite-sized pieces
  • 2 large eggs
  • 1 cup almond flour
  • ½ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika (optional)
  • Salt and pepper, to taste
  • 2–3 tbsp avocado oil (for frying)

For the Orange Sauce:

  • 1 cup chicken broth
  • Zest of 1 orange (only the zest; skip the juice to keep it keto-friendly)
  • 2 tbsp fresh orange juice (optional, adds about 3g carbs)
  • 2 tbsp soy sauce or coconut aminos
  • 1 tsp apple cider vinegar
  • ½ tsp xanthan gum (to thicken)
  • 1–2 tsp monk fruit or erythritol sweetener (to taste)
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 1 tbsp sesame oil

Instructions

For the Chicken:

  1. Prepare the Coating: In a bowl, mix almond flour, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
  2. Dip the Chicken: Beat the eggs in a separate bowl. Dip each chicken piece in the egg, then coat it with the almond flour mixture.
  3. Fry the Chicken: Heat avocado oil in a large skillet over medium heat. Fry the chicken pieces until golden brown and cooked through (about 4–5 minutes per side). Remove and set aside.

For the Sauce:

  1. Combine Ingredients: In a small saucepan, mix chicken broth, orange zest, soy sauce (or coconut aminos), apple cider vinegar, sweetener, ginger, garlic, and sesame oil.
  2. Thicken the Sauce: Simmer over medium heat for 5–7 minutes. Slowly sprinkle in xanthan gum while whisking to prevent clumping. Cook until thickened.
  3. Taste and Adjust: Taste and adjust sweetness or acidity as needed.

Assemble:

  1. Add the fried chicken to the sauce and toss to coat evenly.
  2. Garnish with sesame seeds and chopped green onions if desired.

Serving Suggestions

  • Serve over cauliflower rice or alongside steamed broccoli for a full keto meal.
