Keto Onion Rings

Ingredients:
For the onion rings:
- 2 medium-sized onions (yellow or white onions work best)
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup grated parmesan cheese (optional, for extra flavor)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1/4 cup heavy cream (or unsweetened almond milk)
- 1 cup pork rinds (crushed into crumbs) – optional, for extra crispiness
- Avocado oil or coconut oil for frying (or use an air fryer)
For the dipping sauce (optional):
- 1/2 cup mayonnaise
- 1-2 tablespoons sugar-free ketchup
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
Prepare the onion rings:
- Prep the onions:
- Peel and slice the onions into 1/2-inch thick rings. You can separate the rings from each other gently after slicing.
- Set up the breading station:
- In one shallow bowl, whisk together the eggs and heavy cream (or almond milk).
- In another shallow bowl, mix together the almond flour, coconut flour, parmesan cheese (if using), garlic powder, onion powder, paprika, salt, and pepper.
- If you’re using crushed pork rinds for extra crunch, place them in a third shallow bowl.
- Coat the onion rings:
- Dip each onion ring into the egg mixture, making sure it’s fully coated, and then dredge it in the almond flour mixture. For extra crispiness, you can dip it into the crushed pork rinds after the flour mixture.
- Repeat for all the onion rings and set them aside on a plate or tray.
- Fry the onion rings:
- Heat about 1-2 inches of avocado oil (or coconut oil) in a deep skillet over medium heat. The oil should be hot enough that a small piece of breading sizzles when dropped in (about 350°F or 175°C).
- Fry the onion rings in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes per side, or until golden brown and crispy.
- Once cooked, transfer the onion rings to a paper towel-lined plate to drain excess oil.
- Preheat the air fryer to 375°F (190°C).
- Lightly spray the onion rings with avocado oil spray and place them in the air fryer basket in a single layer.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Prepare the dipping sauce (optional):
- In a small bowl, mix together the mayonnaise, sugar-free ketchup, Dijon mustard, and a pinch of salt and pepper. Adjust the flavors to your liking.
- Serve:
- Serve the crispy keto onion rings hot with the dipping sauce on the side, and enjoy!
Tips:
- For extra crunch, you can double-coat the onion rings by dipping them in the egg and almond flour mixture twice.
- If you don’t want to fry the onion rings, you can bake them at 400°F (200°C) for 15-20 minutes, flipping halfway through.
