Keto No bake Blueberry Cheesecake Bars

Ingredients

Crust:

  • 1 cup almond flour
  • 2 tablespoons granulated erythritol or your preferred keto sweetener
  • 3 tablespoons melted butter

Filling:

  • 2 cups cream cheese (softened)
  • 1 cup heavy cream
  • 1/2 cup granulated erythritol or your preferred keto sweetener
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh or frozen blueberries (thawed and drained if using frozen)

Blueberry Topping:

  • 1 cup fresh or frozen blueberries
  • 2 tablespoons granulated erythritol or your preferred keto sweetener
  • 1 teaspoon lemon juice
  • 1 tablespoon water (or as needed)

Instructions

  1. Prepare the Crust:
    • In a medium bowl, combine the almond flour, erythritol, and melted butter. Mix until the mixture resembles coarse crumbs.
    • Press the mixture evenly into the bottom of an 8×8-inch (20×20 cm) baking pan lined with parchment paper. Use the back of a spoon to press it down firmly.
    • Refrigerate while you prepare the filling.
  2. Prepare the Filling:
    • In a large bowl, beat the softened cream cheese until smooth.
    • Add the erythritol, vanilla extract, and heavy cream. Beat until the mixture is light and fluffy.
    • Gently fold in the blueberries, making sure they are evenly distributed.
  3. Assemble the Bars:
    • Pour the cream cheese filling over the prepared crust. Smooth the top with a spatula.
    • Refrigerate for at least 2 hours or until the filling is set.
  4. Prepare the Blueberry Topping:
    • In a small saucepan, combine the blueberries, erythritol, lemon juice, and water.
    • Cook over medium heat, stirring occasionally, until the blueberries break down and the mixture thickens (about 5-7 minutes). If it gets too thick, you can add a bit more water.
    • Let the topping cool completely before spreading it over the cheesecake bars.
  5. Serve:
    • Once the cheesecake bars are set and the topping is cool, spread the blueberry topping evenly over the cheesecake layer.
    • Cut into squares and serve chilled.
  6. Storage:
    • Store the bars in an airtight container in the refrigerator for up to 5 days. You can also freeze them for longer storage.
