Ingredients
Crust:
- 1 cup almond flour
- 2 tablespoons granulated erythritol or your preferred keto sweetener
- 3 tablespoons melted butter
Filling:
- 2 cups cream cheese (softened)
- 1 cup heavy cream
- 1/2 cup granulated erythritol or your preferred keto sweetener
- 1 teaspoon vanilla extract
- 1/2 cup fresh or frozen blueberries (thawed and drained if using frozen)
Blueberry Topping:
- 1 cup fresh or frozen blueberries
- 2 tablespoons granulated erythritol or your preferred keto sweetener
- 1 teaspoon lemon juice
- 1 tablespoon water (or as needed)

Instructions
- Prepare the Crust:
- In a medium bowl, combine the almond flour, erythritol, and melted butter. Mix until the mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom of an 8×8-inch (20×20 cm) baking pan lined with parchment paper. Use the back of a spoon to press it down firmly.
- Refrigerate while you prepare the filling.
- Prepare the Filling:
- In a large bowl, beat the softened cream cheese until smooth.
- Add the erythritol, vanilla extract, and heavy cream. Beat until the mixture is light and fluffy.
- Gently fold in the blueberries, making sure they are evenly distributed.
- Assemble the Bars:
- Pour the cream cheese filling over the prepared crust. Smooth the top with a spatula.
- Refrigerate for at least 2 hours or until the filling is set.
- Prepare the Blueberry Topping:
- In a small saucepan, combine the blueberries, erythritol, lemon juice, and water.
- Cook over medium heat, stirring occasionally, until the blueberries break down and the mixture thickens (about 5-7 minutes). If it gets too thick, you can add a bit more water.
- Let the topping cool completely before spreading it over the cheesecake bars.
- Serve:
- Once the cheesecake bars are set and the topping is cool, spread the blueberry topping evenly over the cheesecake layer.
- Cut into squares and serve chilled.
- Storage:
- Store the bars in an airtight container in the refrigerator for up to 5 days. You can also freeze them for longer storage.
