Keto Neapolitan Cookie
Ingredients
Base Dough:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 cup powdered erythritol (or your preferred keto sweetener)
- 1/2 cup butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
Vanilla Layer:
- 1/3 of the base dough
- 1/2 tsp vanilla extract
Chocolate Layer:
- 1/3 of the base dough
- 2 tbsp unsweetened cocoa powder
- 1 tbsp almond milk (if needed for consistency)
Strawberry Layer:
- 1/3 of the base dough
- 2 tbsp freeze-dried strawberry powder
- 1-2 drops red food coloring (optional, for a deeper color)

Instructions
- Prepare the Base Dough:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the almond flour, coconut flour, powdered erythritol, baking powder, and salt.
- Add the softened butter, egg, and vanilla extract to the dry ingredients and mix until well combined. The dough should be firm but pliable.
- Divide and Flavor the Dough:
- Divide the base dough into three equal parts.
- Mix one part with the additional vanilla extract.
- Mix the second part with the cocoa powder. If the dough becomes too dry, add a small amount of almond milk to reach the right consistency.
- Mix the third part with the freeze-dried strawberry powder. Add food coloring if desired.
- Assemble the Cookies:
- Roll each flavored dough into a log of the same length and thickness.
- Place the three logs side by side and gently press them together. Carefully roll the combined dough into a single log, ensuring the three flavors remain distinct.
- Slice and Bake:
- Slice the log into 1/4-inch thick cookies and place them on the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Cool and Enjoy:
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
