Keto Neapolitan Cookie

Ingredients

Base Dough:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup powdered erythritol (or your preferred keto sweetener)
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt

Vanilla Layer:

  • 1/3 of the base dough
  • 1/2 tsp vanilla extract

Chocolate Layer:

  • 1/3 of the base dough
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp almond milk (if needed for consistency)

Strawberry Layer:

  • 1/3 of the base dough
  • 2 tbsp freeze-dried strawberry powder
  • 1-2 drops red food coloring (optional, for a deeper color)

Instructions

  1. Prepare the Base Dough:
    • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a large bowl, mix the almond flour, coconut flour, powdered erythritol, baking powder, and salt.
    • Add the softened butter, egg, and vanilla extract to the dry ingredients and mix until well combined. The dough should be firm but pliable.
  2. Divide and Flavor the Dough:
    • Divide the base dough into three equal parts.
    Vanilla Layer:
    • Mix one part with the additional vanilla extract.
    Chocolate Layer:
    • Mix the second part with the cocoa powder. If the dough becomes too dry, add a small amount of almond milk to reach the right consistency.
    Strawberry Layer:
    • Mix the third part with the freeze-dried strawberry powder. Add food coloring if desired.
  3. Assemble the Cookies:
    • Roll each flavored dough into a log of the same length and thickness.
    • Place the three logs side by side and gently press them together. Carefully roll the combined dough into a single log, ensuring the three flavors remain distinct.
  4. Slice and Bake:
    • Slice the log into 1/4-inch thick cookies and place them on the prepared baking sheet.
    • Bake for 10-12 minutes or until the edges are lightly golden.
  5. Cool and Enjoy:
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
