Ingredients:
- 3 tbsp gelatin powder (unflavored)
- 1/2 cup cold water (for blooming gelatin)
- 1/2 cup hot water
- 1/2 cup powdered erythritol (or your favorite keto sweetener, powdered)
- 1 tsp vanilla extract
- Optional: pinch of salt
- Optional: powdered erythritol or coconut flour for dusting
Instructions:
- Bloom the gelatin:
In a small bowl, sprinkle the gelatin over 1/2 cup cold water. Let it sit for about 5 minutes until it thickens. - Dissolve sweetener:
In a saucepan, combine 1/2 cup hot water and powdered erythritol. Stir until the sweetener is completely dissolved. Remove from heat. - Mix gelatin:
Add the bloomed gelatin to the sweetener mixture and stir until fully dissolved. - Whip:
Pour the mixture into a mixing bowl. Using a hand mixer or stand mixer, whip on high speed for about 8-10 minutes until the mixture becomes thick, glossy, and forms stiff peaks. - Add vanilla:
During the last minute of whipping, add the vanilla extract (and a pinch of salt if using). - Set:
Pour the marshmallow mixture into a lined (with parchment paper) or greased pan. Smooth the top evenly. Let it set at room temperature for at least 4 hours or overnight. - Cut and dust:
Once set, cut into squares and dust with powdered erythritol or coconut flour to prevent sticking.
