Keto Loaded Cauliflower Casserole
Ingredients
- 1 head of cauliflower, cut into florets
- 4 oz cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese, plus extra for topping
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, sliced (plus more for garnish)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste

Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Cook the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes until tender. Drain and let cool slightly.
- Prepare the Mixture: In a large mixing bowl, combine the softened cream cheese, sour cream, shredded cheddar cheese, crumbled bacon, green onions, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Combine Cauliflower and Mixture: Add the cooked cauliflower to the cheese mixture and gently stir until the cauliflower is well coated.
- Transfer to Baking Dish: Spoon the mixture into a greased 9×13 inch baking dish. Spread it out evenly.
- Top with Cheese: Sprinkle additional shredded cheddar cheese on top.
- Bake: Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is golden.
- Garnish and Serve: Remove from the oven and let it cool slightly. Garnish with additional green onions before serving.
