Keto KFC Style Keto Chicken

Ingredients:

For the Chicken:

  • 2 lbs chicken drumsticks, thighs, or breasts
  • 1 cup almond flour
  • 1 cup crushed pork rinds
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/4 tsp cayenne pepper (optional for a bit of heat)
  • Avocado oil or another high smoke point oil for frying

Instructions:

  1. Prepare the Chicken:
    • Preheat your oven to 400°F (200°C) if you prefer baking the chicken instead of frying.
    • Pat the chicken pieces dry with paper towels to ensure they are completely dry.
  2. Set Up Breading Stations:
    • In one shallow bowl, combine the almond flour, crushed pork rinds, grated Parmesan cheese, paprika, garlic powder, onion powder, salt, black pepper, oregano, basil, thyme, and cayenne pepper.
    • In another shallow bowl, whisk together the eggs and heavy cream.
  3. Bread the Chicken:
    • Dip each piece of chicken into the egg mixture, ensuring it is fully coated.
    • Then, dredge the chicken in the almond flour and pork rind mixture, pressing down to ensure a good coating.
  4. Fry or Bake the Chicken:
    • For Frying:
      • Heat a large skillet over medium-high heat and add enough oil to cover the bottom of the pan.
      • Once the oil is hot, add the chicken pieces and fry for about 5-7 minutes per side, or until the chicken is golden brown and cooked through.
      • Transfer the fried chicken to a paper towel-lined plate to drain any excess oil.
    • For Baking:
      • Place the breaded chicken pieces on a baking sheet lined with parchment paper.
      • Bake in the preheated oven for 35-40 minutes, or until the chicken is golden brown and cooked through, flipping halfway through the baking time for even crispiness.
  5. Serve:

Tips:

  • To ensure extra crispy chicken, you can double-dip the chicken in the egg mixture and the breading mixture.
  • Adjust the seasonings to your taste. If you prefer spicier chicken, add more cayenne pepper or even a dash of hot sauce to the egg mixture.
