Keto Hard Boiled Egg Fritters

Ingredients:-
- 6 hard-boiled eggs, peeled and chopped
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1/4 cup finely chopped green onions
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 large eggs, beaten
- 1/2 cup coconut oil or avocado oil for frying
Instructions:-
- Prepare the Fritters Mixture:
- In a large bowl, combine the chopped hard-boiled eggs, almond flour, Parmesan cheese, mozzarella cheese, green onions, mayonnaise, Dijon mustard, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are thoroughly combined.
- Form the Fritters:
- Using your hands, shape the mixture into small patties, about the size of a golf ball, and then flatten them slightly.
- Coat the Fritters:
- Dip each fritter into the beaten eggs, ensuring they are fully coated.
- Fry the Fritters:
- In a large skillet, heat the coconut oil or avocado oil over medium heat.
- Once the oil is hot, carefully place the fritters in the skillet. Fry them for about 3-4 minutes on each side, or until they are golden brown and crispy.
- Drain and Serve:
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
- Serve hot with a dipping sauce of your choice, such as a keto-friendly ranch or spicy mayo.
