Keto Hard Boiled Egg Fritters

Ingredients:-

  • 6 hard-boiled eggs, peeled and chopped
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup finely chopped green onions
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • 1/2 cup coconut oil or avocado oil for frying

Instructions:-

  1. Prepare the Fritters Mixture:
    1. In a large bowl, combine the chopped hard-boiled eggs, almond flour, Parmesan cheese, mozzarella cheese, green onions, mayonnaise, Dijon mustard, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  2. Form the Fritters:
    1. Using your hands, shape the mixture into small patties, about the size of a golf ball, and then flatten them slightly.
  3. Coat the Fritters:
    1. Dip each fritter into the beaten eggs, ensuring they are fully coated.
  4. Fry the Fritters:
    1. In a large skillet, heat the coconut oil or avocado oil over medium heat.
    2. Once the oil is hot, carefully place the fritters in the skillet. Fry them for about 3-4 minutes on each side, or until they are golden brown and crispy.
  5. Drain and Serve:
    1. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
    2. Serve hot with a dipping sauce of your choice, such as a keto-friendly ranch or spicy mayo.

Tips:

  • Make sure the oil is hot enough before adding the fritters to ensure they become crispy.
  • You can add other herbs or spices to the mixture to suit your taste.
  • These fritters can be stored in the refrigerator for a few days and reheated in the oven or air fryer.
