Keto Glazed Donuts

Ingredients:

For the Donuts:

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1/4 cup erythritol (or your favorite keto sweetener)
  • 1 tsp baking powder
  • 1/2 tsp xanthan gum (optional, for texture)
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract

For the Glaze:

  • 1/2 cup powdered erythritol (or powdered keto sweetener)
  • 1-2 tbsp unsweetened almond milk
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a donut pan with butter or coconut oil.
  2. In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, xanthan gum, and salt.
  3. In another bowl, whisk together eggs, almond milk, melted butter, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until a smooth batter forms.
  5. Spoon the batter evenly into the donut pan cavities.
  6. Bake for 15-18 minutes, or until the donuts are golden and a toothpick inserted comes out clean.
  7. Let donuts cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Make the glaze: Whisk powdered erythritol, almond milk, and vanilla until smooth. Adjust thickness by adding more almond milk if needed.
  9. Dip the cooled donuts into the glaze, then place back on the rack to let the glaze set.
