Keto Glazed Donuts

Ingredients:
For the Donuts:
- 1 cup almond flour
- 2 tbsp coconut flour
- 1/4 cup erythritol (or your favorite keto sweetener)
- 1 tsp baking powder
- 1/2 tsp xanthan gum (optional, for texture)
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
For the Glaze:
- 1/2 cup powdered erythritol (or powdered keto sweetener)
- 1-2 tbsp unsweetened almond milk
- 1/2 tsp vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease a donut pan with butter or coconut oil.
- In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, xanthan gum, and salt.
- In another bowl, whisk together eggs, almond milk, melted butter, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until a smooth batter forms.
- Spoon the batter evenly into the donut pan cavities.
- Bake for 15-18 minutes, or until the donuts are golden and a toothpick inserted comes out clean.
- Let donuts cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Make the glaze: Whisk powdered erythritol, almond milk, and vanilla until smooth. Adjust thickness by adding more almond milk if needed.
- Dip the cooled donuts into the glaze, then place back on the rack to let the glaze set.
