keto GARLIC PARMESAN ROASTED POTATOES

Ingredients:

  • 1 lb radishes (or turnips/rutabaga), quartered
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper, to taste
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions:

  1. Preheat Oven:
    Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare Veggies:
    Wash and dry the radishes. Quarter them into bite-sized pieces. If using turnips or rutabaga, peel and cut them into chunks.
  3. Season the Veggies:
    In a large bowl, toss the radishes with olive oil, minced garlic, Parmesan cheese, Italian seasoning, smoked paprika, salt, and pepper.
  4. Roast:
    Spread the seasoned radishes evenly on the prepared baking sheet. Roast for 25–30 minutes, tossing halfway through, until golden and crispy on the edges.
  5. Garnish & Serve:
    Remove from the oven and sprinkle with fresh parsley. Serve hot as a side dish or snack!
