Keto Garlic Dinner Rolls

Ingredients:

  • For the Rolls:
    • 2 cups almond flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon garlic powder
    • 2 cups shredded mozzarella cheese
    • 2 oz cream cheese
    • 2 large eggs
  • For the Garlic Butter:
    • 2 tablespoons unsalted butter
    • 2 cloves garlic, minced
    • 1 tablespoon fresh parsley, chopped (optional)
    • Pinch of salt

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the Dough:
    • In a large mixing bowl, combine almond flour, baking powder, and garlic powder.
    • In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for about 1-2 minutes, or until the cheese is completely melted. Stir to combine.
    • Add the melted cheese mixture to the dry ingredients. Add the eggs and mix until a dough forms. You can use a spoon or your hands (grease your hands if the dough is sticky).
  3. Shape the Rolls:
    • Divide the dough into 8-10 equal portions and roll them into balls. Place them on the prepared baking sheet.
  4. Bake:
    • Bake in the preheated oven for 12-15 minutes, or until the rolls are golden brown on top.
  5. Prepare the Garlic Butter:
    • While the rolls are baking, melt the butter in a small saucepan over low heat. Add the minced garlic and cook for about 1 minute, or until fragrant. Remove from heat and stir in the chopped parsley and a pinch of salt.
  6. Brush with Garlic Butter:
    • Once the rolls are done, remove them from the oven and brush them with the garlic butter.
  7. Serve:
