KETO GARLIC CHICKEN STIR FRY
Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 2 tbsp avocado oil (or olive oil)
- 1 medium bell pepper, sliced (red, yellow, or green)
- 1 medium zucchini, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 small onion, sliced
- 3-4 garlic cloves, minced
- 1 tsp ginger, minced
- 3 tbsp soy sauce (or coconut aminos for a soy-free option)
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp chili flakes (optional, for a bit of heat)
- Salt and pepper, to taste
- Sesame seeds and chopped green onions for garnish
Instructions
- Prepare the Chicken:
- Season the chicken pieces with a bit of salt and pepper.
- Cook the Chicken:
- Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat.
- Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Cook the Vegetables:
- In the same skillet, add the remaining tablespoon of avocado oil.
- Add the garlic and ginger, and sauté for about 1 minute until fragrant.
- Add the onion, bell pepper, zucchini, broccoli, and snap peas. Stir-fry the vegetables until they are tender-crisp, about 4-5 minutes.
- Combine Chicken and Vegetables:
- Return the cooked chicken to the skillet with the vegetables.
- Pour in the soy sauce (or coconut aminos), rice vinegar, and sesame oil.
- Stir everything together and cook for an additional 2-3 minutes, allowing the flavors to meld together.
- Serve:
- Remove from heat and garnish with sesame seeds and chopped green onions.
- Serve immediately and enjoy!
