KETO GARLIC CHICKEN STIR FRY

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tbsp avocado oil (or olive oil)
  • 1 medium bell pepper, sliced (red, yellow, or green)
  • 1 medium zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 small onion, sliced
  • 3-4 garlic cloves, minced
  • 1 tsp ginger, minced
  • 3 tbsp soy sauce (or coconut aminos for a soy-free option)
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp chili flakes (optional, for a bit of heat)
  • Salt and pepper, to taste
  • Sesame seeds and chopped green onions for garnish

Instructions

  1. Prepare the Chicken:
    • Season the chicken pieces with a bit of salt and pepper.
  2. Cook the Chicken:
    • Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat.
    • Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Cook the Vegetables:
    • In the same skillet, add the remaining tablespoon of avocado oil.
    • Add the garlic and ginger, and sautรฉ for about 1 minute until fragrant.
    • Add the onion, bell pepper, zucchini, broccoli, and snap peas. Stir-fry the vegetables until they are tender-crisp, about 4-5 minutes.
  4. Combine Chicken and Vegetables:
    • Return the cooked chicken to the skillet with the vegetables.
    • Pour in the soy sauce (or coconut aminos), rice vinegar, and sesame oil.
    • Stir everything together and cook for an additional 2-3 minutes, allowing the flavors to meld together.
  5. Serve:
    • Remove from heat and garnish with sesame seeds and chopped green onions.
    • Serve immediately and enjoy!
