Instructions
Prepare the Cream Cheese Mixture:
In a medium bowl, mix the softened cream cheese with grated parmesan, garlic powder, onion powder, salt, and pepper. Stir until smooth and well combined.
Layer the Antipasto Toppings:
Lay a sheet of plastic wrap or parchment paper on a flat surface. Spread the cream cheese mixture evenly onto it, forming a rectangle about 1/2-inch thick.
Sprinkle the sun-dried tomatoes, roasted red peppers, olives, basil, and optional pepperoni/salami evenly across the cream cheese layer.
Roll into a Log:
Carefully roll the cream cheese mixture into a log shape, using the plastic wrap or parchment to guide and tighten the roll. Seal the ends and refrigerate for at least 2 hours (or overnight) to firm up.
Add Garnish:
Before serving, remove the log from the plastic wrap. Roll it in crushed nuts or sprinkle fresh herbs on top for a festive look.
Serve:
Place the antipasto cream cheese log on a platter and serve with keto-friendly crackers, sliced cucumber, or bell pepper strips.
