Keto French Toast Roll-ups

Ingredients:

  • For the Roll-Ups:
    • 4 slices of keto-friendly bread (such as almond flour or coconut flour bread)
    • 2 large eggs
    • 2 tablespoons heavy cream
    • 1 teaspoon vanilla extract
    • 1 teaspoon cinnamon
    • 1 tablespoon erythritol or other keto-friendly sweetener (optional)
  • For the Filling:
    • 4 oz cream cheese, softened
    • 2 tablespoons erythritol or other keto-friendly sweetener
    • 1 teaspoon vanilla extract
    • Berries (optional, for garnish)

Instructions:

  1. Prepare the Bread:
    • Trim the crusts off the keto bread slices and gently flatten each slice with a rolling pin.
  2. Make the Filling:
    • In a small bowl, mix the softened cream cheese, erythritol, and vanilla extract until well combined.
  3. Assemble the Roll-Ups:
    • Spread a thin layer of the cream cheese mixture on each slice of flattened bread.
    • Roll each slice tightly, starting from one end to the other.
  4. Prepare the Egg Mixture:
    • In a shallow bowl, whisk together the eggs, heavy cream, vanilla extract, cinnamon, and erythritol.
  5. Cook the Roll-Ups:
    • Heat a skillet over medium heat and add a little butter or coconut oil.
    • Dip each roll-up in the egg mixture, coating it well, then place it in the skillet.
    • Cook for about 2-3 minutes on each side until golden brown.
  6. Serve:
    • Serve warm, topped with more berries if desired and a sprinkle of powdered erythritol for sweetness.

Tips:

  • You can also add a bit of nutmeg or a splash of almond extract for extra flavor.
  • Adjust the sweetness to your preference, especially if you like it sweeter.
