Keto French Onion Chicken

Ingredients:
- 2 large chicken breasts (cut in half lengthwise) or 4 small ones
- 2 tbsp butter
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- ½ tsp dried thyme
- ½ tsp salt
- ½ tsp black pepper
- ½ cup shredded mozzarella cheese
- ½ cup shredded gruyère or Swiss cheese
- ½ tsp xanthan gum (optional, for thickening)
- Fresh parsley for garnish
Instructions:
1️⃣ Caramelize the Onions:
- In a skillet, melt butter over medium-low heat. Add sliced onions and cook slowly, stirring occasionally, for about 15-20 minutes until golden and caramelized.
- Add garlic and cook for another minute.
2️⃣ Prepare the Chicken:
- Season chicken with salt and pepper. In the same skillet, push onions to the side and sear chicken for 3-4 minutes per side until browned. Remove and set aside.
3️⃣ Make the Sauce:
- Pour in beef broth, Worcestershire sauce, and thyme. Stir well. If using xanthan gum, sprinkle it lightly and mix until slightly thickened.
4️⃣ Combine & Bake:
- Return chicken to the skillet and spoon some onions over each piece. Sprinkle both cheeses evenly on top.
- Cover and let simmer on low until cheese melts OR broil for 3-5 minutes for a bubbly, golden top.
5️⃣ Serve & Enjoy:
- Garnish with fresh parsley and serve with cauliflower mash or a side salad!
