Keto French Onion Chicken

Ingredients:

  • 2 large chicken breasts (cut in half lengthwise) or 4 small ones
  • 2 tbsp butter
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • ½ tsp dried thyme
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded gruyère or Swiss cheese
  • ½ tsp xanthan gum (optional, for thickening)
  • Fresh parsley for garnish

Instructions:

1️⃣ Caramelize the Onions:

  • In a skillet, melt butter over medium-low heat. Add sliced onions and cook slowly, stirring occasionally, for about 15-20 minutes until golden and caramelized.
  • Add garlic and cook for another minute.

2️⃣ Prepare the Chicken:

  • Season chicken with salt and pepper. In the same skillet, push onions to the side and sear chicken for 3-4 minutes per side until browned. Remove and set aside.

3️⃣ Make the Sauce:

  • Pour in beef broth, Worcestershire sauce, and thyme. Stir well. If using xanthan gum, sprinkle it lightly and mix until slightly thickened.

4️⃣ Combine & Bake:

  • Return chicken to the skillet and spoon some onions over each piece. Sprinkle both cheeses evenly on top.
  • Cover and let simmer on low until cheese melts OR broil for 3-5 minutes for a bubbly, golden top.

5️⃣ Serve & Enjoy:

  • Garnish with fresh parsley and serve with cauliflower mash or a side salad!
