Ingredients:

For the Dough:

  • 2 cups shredded mozzarella cheese
  • 1/4 cup cream cheese
  • 1 large egg
  • 1 1/2 cups almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Filling:

  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked pepperoni slices, chopped (or any desired pizza toppings like sausage, mushrooms, or bell peppers)
  • 1/2 cup pizza sauce (sugar-free)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the Egg Wash (optional):

  • 1 egg, beaten

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Make the Dough:
    • In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave for 30-second intervals, stirring in between, until the cheese is melted and smooth.
    • Once melted, mix in the almond flour, baking powder, and salt. Stir until well combined.
    • Add the egg and mix until a dough forms. You might need to knead it a bit with your hands to ensure everything is well incorporated.
  3. Form the Pockets:
    • Place the dough between two sheets of parchment paper. Roll out the dough to about 1/8 inch thickness.
    • Cut the dough into squares or circles, depending on your preference. The size should be large enough to fold over and seal.
  4. Add the Filling:
    • On one half of each dough square or circle, add a spoonful of pizza sauce, a sprinkle of shredded mozzarella, and your desired pizza toppings.
    • Fold the dough over the filling to create a pocket. Press the edges together to seal. You can use a fork to crimp the edges or press them with your fingers.
  5. Apply Egg Wash (Optional):
    • Brush the tops of the pizza pockets with the beaten egg for a golden finish.
  6. Bake:
    • Place the pizza pockets on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, or until the pockets are golden brown and the cheese is bubbly.
  7. Cool and Serve:
    • Let the pizza pockets cool for a few minutes before serving. They’re great on their own or with a side of additional pizza sauce for dipping.
